Macaroni Yum: A Fun (Healthy) Twist on the "Ice Cream" Sandwich!

This isn't your ordinary frozen treat!

Who doesn't love an ice cream sandwich? This yummy alternative is a great treat for kids and adults and it's dairy-free!

Ingredients:
  • 2-2 1/2 soft bananas
  • 2 tbsp. of peanut butter or almond butter (tried both ways and kids loved them)
  • 16 graham crackers broken in half (try cinnamon or chocolate)
  • Handful of mini chocolate chips (optional)
Instructions:
  1. Peel and mash bananas in medium bowl
  2. Add peanut or almond butter
  3. Mix with spatula until blended
  4. Add chocolate chips (optional) and stir
  5. Spoon a dollop of the mix onto half of a graham cracker and place other half on top
  6. Repeat until ingredients are gone
  7. Place in freezer for at least 2 hours (Middle will not be mushy when they are ready)
The mashed banana takes on an ice cream consistency when frozen, resulting in a twist on an ordinary ice cream sandwich that everyone will enjoy!
